How the numbers are worked out
Chairs = seated guests × (1 + buffer), rounded up. The buffer covers no-shows moved, late swaps and standby seats.
Tables = seated guests ÷ seats per table, rounded up. Fewer seats per table means more tables and wider service lanes.
